Meringue Chocolate Cookies

I have seen these called "Surprise Meringues" on the internet but I remember in my childhood, my next door neighbor and surrogate grandmother, Frances, making these at Christmas time.  I think she called then chocolate chip meringues. I am not sure I was crazy about them as a child as the texture was really weird compared to oreos or chocolate chip cookies, but I made these today with my daughter and they tasted wonderful.  (She ate 3.)






Pre-Heat oven to 275

2 egg whites
1/8 tsp cream of tarter
1 tsp vanilla
3/4 c sugar
1/4 walnuts ground (I used my coffee grinder)
1 cup chocolate chips
2 T cocoa

Using a whisk attachment on my stand mixer, whip eggs until foamy
Add cream of tarter.  Add sugar gradually (by tablespoons) and whip till stiff peaks
Add vanilla.

Mix nuts, chips, and cocoa in a separate bowl and fold into meringue

using tablespoon, drop on parchment lined sheets and bake for 25 minutes. Then let sit in oven for 1 hour

Makes about 2 dozen
